How to Brew Turkish Tea in a Double Teapot
Three things matter most for good Turkish tea: fresh water, the right amount of tea and enough time. The method below is a practical starting point for a classic double teapot.
1. Boil the water
Fill the lower kettle with fresh drinking water and bring it to the boil. Add about one teaspoon of black tea per person to the upper pot. Adjust the amount later for the tea and your preferred strength.
2. Start the infusion
When the water boils, pour enough into the upper pot to cover the tea. Refill the lower kettle and reduce the heat. Let the tea infuse gently over the steam instead of boiling vigorously.
3. Wait and taste
After roughly 15–20 minutes, the leaves begin to settle. Test a small glass. Give it a little longer if it is too light, or balance a strong brew with hot water when serving.
4. Serve to taste
Pour the concentrated tea first, then add hot water to set the strength. Avoid holding the brew over high heat for a long time, which can make the flavour harsh. Prepare only as much as you plan to drink.
